Corn (PFP)
Cornstarch is a starch made from the corn grain and grown from the endosperm of the corn kernel is used as a thickening agent in soups and liquid-based foods, such as sauces, gravies and custard. As the starch is heated, the molecular chains unravel, allowing them to collide with other starch chains to form a mesh, thickening the liquid.

Potato
Potato starch is made through an extensive process of washing, sometimes cooking, and then separating the starch present in potato cell walls so that it can be made into powdered or liquid form.

Tapioca
Tapioca starch is a thickener and stabilizer which can withstand long cooking times without breaking down.  Products made with tapioca maintain their quality when frozen or reheated because tapioca retains its thickening capabilities throughout these processes.    NOTE: Tapioca is gluten free.
